Moutai is a fermented product of grains (sorghum and wheat) with an alcohol content of 53°.
Over the years, it has become a status symbol in China and a must-have for important meetings and dinners. It is the official drink of the Chinese government and Chinese embassies around the world, so it is also known as the "diplomatic wine".
But what makes Moutai different from other liquors used in Chinese restaurants and kitchens? Mainly due to its quality and its history.
Moutai, along with French Cognac and Scotch whiskey, is considered the best liquor in the world. It's a heritage that's over a thousand years old - it's said to date back around 2,000 years ago - and some of the earliest recorded references are in 135 BC.
It uses sorghum and wheat as its basic ingredients and can only be produced in Moutai City, Guizhou Province. The site has a unique microclimate that promotes the growth of specific microorganisms active in fermentation, as well as the special composition of water and soil found in the Chishui River Valley, which are the basic elements of Moutai's unique taste: extremely pure, mild and mellow, and long-lasting fragrance .
Its production is seasonal. In order to obtain a single drop of this liquor, at least three years of processing are required. The process includes various stages of distillation, such as steaming and blending, based on traditional techniques developed over hundreds of years of experience, and up to 9 cycles of fermentation and distillation.
Moutai is produced in the Chishui River area, a nature reserve covering an area of more than 32 square kilometers. The special preparation environment and natural processing give Moutai unparalleled quality.
Every drop of water that goes into Moutai bottles flows directly from the surrounding watershed, a protected area more than 100 kilometers from the city. Masters of natural fermentation and distillation, craftsmen at Moutai often spend their entire lives perfecting their craft. The complex tasting notes are the result of a long and rigorous process of amalgamation. No artificial products are ever added, only certified organic wheat and sorghum are used.
Moutai's ingredients are collected according to the lunar harvest tradition and distilled using the most rigorous techniques. Making each bottle of Moutai requires 9 distillation stages, 8 filtration stages, 7 fermentation stages and at least 3 years of brewing time. Unlike liqueurs/spirits, Moutai is handcrafted from start to finish.
Only Cognac brandy can be labeled as Cognac. The same goes for Moutai, which can only be produced in the city of the same name. Attempts to replicate Moutai's rich, earthy flavor elsewhere have failed. The methods of growing the grains, the purest water and the region's usual climate combine to create a product with unique and distinctive characteristics.

The selected raw materials are pure water from the Chishui River Valley, sorghum rice and wheat grown according to traditional agricultural requirements. They do not contain pesticides, genetically modified organisms and are strictly of organic origin.
The various production processes handed down over centuries strictly follow the 24 solar terms of Chinese farming traditions.
The ingredients are steamed nine times, then fermented at least eight times and distilled at least seven times.
